The Potato
1990) NEWS AND REVIEWS 319 The Potato, third edition. 1989. W.G. Burton. Longman Group U. K. Limit- ed, Longman House, Burnt Mill, Harlow, Essex CM20 2JE, England and John Wiley & Sons, Inc., 605 Third Avenue, New York, NY 10158. 742 pp. This edition has been updated to the middle 1980s with added litera- ture citations and revisions. It accents the physiology of the potato plant, tuber growth, and storage. Several chapters are dedicated to plant processes and their influence on tuber quality for use as table, chip, french fry, or seed. Discussion by the author of the various subjects is complete and fre- quently present variable findings when considering complex subjects. Sec- tions concerning tuber storage from either a physiologic or a pathogenetic aspect are well covered. Agronomic principles of tuber production, water, and nutritional aspects, are rapidly reviewed. This book will serve for years to come as an excellent source of refer- ence material for students and researchers in their study of the potato. The bibliography is extensive and accounts for 95 pages of the book. The liter- ature cited is from many international journals but concentrates in west- ern Europe and North America. Robert V.
