•Grapevine yield was significantly reduced by drought and by heat shocks.•Temperatures above 35°C induced berry burn, browning and loss of berries.•Climate change scenarios affected more technological than phenolic maturity.•High temperature and drought consistently lowered malic acid, increasing must pH.•Elevated CO2 decreased must pH associated with increases in tartaric acid.
