•Citrus low-methoxyl pectin is thiolated by attaching cysteine moiety via amide bond.•The dispersion of pectin-cysteine conjugate is highly pseudoplastic even at low shear.•The thiolation by cysteine confers pectin with oxidation-responsive gelling capacity.•The gelation of conjugates is thiol content, polymer and H2O2 concentration dependant.•The gel of pectin-cysteine conjugate disintegrates in the presence of reducing agents.
