•Irrigation was cut-off until reaching stem water potential thresholds.•Fruit oil and water content (%) were not affected by these treatments at harvest.•Total polyphenols in the oil were much higher in the water deficit treatments.•The percentages of the main fatty acids were not affected by the treatments.•Sensory tests indicated that the higher polyphenols should lead to greater shelf life.
