•A compressional-puffing (CP) process was utilized to pretreat Illex argentinus squid pen chitin.•The CP process facilitated the increase of the crystalline index and degree of deacetylation of chitins.•The CP process benefited to increase extraction yield and antibacterial activity of the extracted chitosans.•The extracted chitosans showed potential for use as natural antibacterial agents for food and other industrial usages.
