In the literary sense, ensaladas are poetic compositions in which quotations from well-known poems, refrains from popular songs, or fragments of Biblical verse are interspersed with the composerâs original lyrics in liberal rhythmic structures . These âmusical saladsâ are sung in four or ï¬ve voices alternating homophonic passages with polyphonic ones, often accompanied by the vihuela or organ . This immensely popular secular genre of music was humorous and often nonsensical, an artful combination of regional dialects and foreign tongues, the sacred and the profane, the learned and the popular . The musicologist Ferran Muñoz describes ensaladas as a mix of diverse linguistic ingredients dressed with âthe saltiness of satire, the oiliness of irony, and the sharp vinegar of parody .â Catalan Mateo Flecha the Elder (1481â1553) composed eleven ensaladas during his lifetime, which he spent working as a musical director, teacher, and choirmaster for the church and the Spanish court . His work is a reï¬ection of an era when medieval religiosity, traditionally expressed in verses of devotion, spiritual purity, and mysticism, was beginning to waver under the humanist writings of Erasmus . Flecha also wrote sacred music and Christmas carols .
