Seine Sfil~kraft ist etwa halb so grol3 wie die tier Saccharose, der er auch hinsichtlieh des N~hrwertes gleicht. Von Here wird Sorbit nicht vergoren. Er ist in jeder Hinsicht koch- und backtechnisch verwendbar, ohne dab er sich dabei ver~ndert oder verfliichtigt, l%trLI]qGsche LSsung wird yon Sorbit nicht reduziert. Er existiert in 2 optisch aktiven Formen, yon denen die D-Form yon praktischer Bedeutung ist. Die w~Brige AuflSsung ist in jedem Verh~ltnis mit Alkohol und Glycerin mischbar. Wasserfreier Sorbit schmilzt unschaff bei l l 0 - - 1 1 1 ° C, da er sehr hygroskopisch ist. Er finder sich in vielen Frfiehten, besonders reichlich in Vogelbeeren, die neben Sorbit auch Sorbose und Sorbins~ure enthalten. Teehnisch wird Sorbit durch elektrische Reduktion von Tr~ubenzucker gewonnen oder durch katalytische Hydrierung yon Starke bzw. Polysacehariden in Gegenwart yon Phosphorsi~ure. In Deutschland stellte eine einzige chemische Fabrik im Jahre 1950 bereits 40 t Sorbit monatlich her. Im Handel befindct sich in Deutschland chemisch reiner Sorbit in Pulverform und
