Practical Hors d'Oeuvres and Canape Art is a companion volume to Mok's Practical Salad and Dessert Art, published in 1973. Mok has collected 168 recipes for hors d'oeuvres and canapes, each illustrated with color photography. In addition, he provides recipes for I1 I sauces that should prove excellent complements to cocktail-party fare. Perhaps the book's most serious flaw is the failure to note the time required to prepare the items. Many of these items are very elaborate, and it seems reasonable to project that their final assembly would require perhaps a minute to three minutes each after all the ingredients had been made ready - not practical in many operations. There are few other texts that provide such detailed preparation instructions for such a wide assortment of canapes and hors d'oeuvres, and the manager who handles many party functions should find the book useful despite its relatively steep price. -Joseph F.
